Mixed Vegetable Soup

Mixed Vegetable Soup:


Ingredients Needed:

1 Cup shredded cabbage /patta gobi

1/2 cup finely chopped carrots/gajar

1/2 cup sliced mushrooms

1/2 cup chopped capsicum /bell pepper (red or green or yellow)

1/3 cup moong sprouts

1/4 cup finely chopped french beans

1/4 cup finely chopped onion 1 small onion , finely chopped , spring onions can also be added in 
place of onions

2 tsp finely chopped celery (optional)

1 tsp finely chopped garlic / lahsun

3 Cups water, 750 ml

2 tsp soy sauce or as required

1/2 tsp black pepper powder

1 tbsp oil

Salt as required

How To Make:

Heat one tablespoon oil a pan .Add cumin seeds and black peppercorns. When the cumin seeds begin to change add onion and saute for two minutes.

Add carrots, potato , bottle gourd and stir.Add salt and mix.Add two cups of water cover and cook till nearly done.

Add tomatoes and continue to cook, covered , till all the vegetables are completely cooked.Strain and reserve the liquid.

Cool the vegetables and then puree in a blender .Transfer into a deep pan,add the reserved liquid and adjust consistency.It should be quite thick.

Bring the soup to a boil.

Adjust salt, add  stir. Serve hot.
